Vegetation wise, I say GTA V Remastered: Enhanced by Larcius (can be found on GTA5-mods) does a great job of adding trees and props in places that were previously empty. And if you'd like, you can also add Forests of San Andreas on top of it as well for more realism. However, I'm just fine with vRemastered. I remember reading elsewhere that it's best to have cars as add-ons.
